Snakegourd Besan Stir fry



Are you running out of Coconut?Are u bugged of adding dhal or coconut to the stir fries...??Then try out this Besan instead of coconut or Dhal..They taste very different and this stir fry goes very well with Sambhar and rasam sadham...
 
Try out this snakegourd stir fry..u will fall in love with it.
 

 
INGREDIENTS:
 
 
1/2 kg of Snakegourd/Pudalangai
1/3 Cup of Besan Flour/gram flour
1 No. of Onion Chopped
1/2 Tsp of Red Chilli Powder
1/8 Tsp of Turmeric Powder
Salt to taste
 
For Tempering:
 
1 Tsp of Oil
1/2 Tsp of Mustard seeds
1 Tsp of Urad Dhal
A pinch of Hing/Asafoetida
Few curry leaves
 
 
 
 
 
THIS IS HOW I MADE IT:
 
 
 
Peel off the skin and take away the inner seeds and other stuffs inside the snakegourd.
 
 
Chop them into small size.Chop the onions too and keep them ready.
 
 
Heat a non stick pan.Add the besan flour to it
Then add chilli powder and Turmeric powder to it.Add little amount of salt(for the besan alone)
 
 
 
Saute  it in low flame till the raw flavour goes off.
Take off from the flame.
Add 3 Tbsp of water and mix the mixture well.(Switch off the flame while u do it) so that there is no lumps in the mixture.
 
Now heat the besan water mixture in low flame.Keep stirring continously.It will take 10 minutes for it to get thick..The timing depends on the amount of water that u add to the besan flour.More the water more the time..
 
 
 
Keep stirring the mixture till the water gets dried up completely and besan gets scrambled.They will look like besan scramble.
Now switch off the flame and keep it aside.
Heat a pan and add oil.
 
 
 
 
To it add the items mentioned in For tempering list (Mustard,urad dhal,hing,curry leaves) one by one.
Then add chopped onions and saute it.
Add the chopped bottlegourd and saute it for few minutes.
Add salt for the vegetable.(already u had added some salt for the besan flour)
 
 
 
 
 
Sprinkle some water and allow it to cook by closing the pan with the lid.
Let the snakegourd gets cooked.
Now add the fried besan flour to it.
 
 
 
 
 
Give a quick stir and mix well.
Serve it with rasam sadham or sambhar sadham.
 
HANDY TIPS:
 
 
 
 
 
  • Don't cook the snakegourd too much.So avoid adding lots of water while cooking the vegetable
  • Instead of snakegourd u can use capsicum/Bell peppers too.
  • Instead of cooking the vegetable on stovetop you can microwave the vegetable
  • Don't add too much of water for the besan flour.Or else the cooking time will be more.
  • You can add few dry red chillies while tempering.
  • Use non stick pan while u saute the besan flour.
