Baby Corn Golden fry


 
Baby corns are always very dearly to my daughters.They loved it in all forms and hence I started to use baby corn very often at home.Earlier I had posted babycorn stir fry and it was a super hit among my friends..They insisted me to post the recipe of Baby corn golden fry..Vacation had started for the kids and I find difficult to make them engaged...They  insist upon new games and also new dishes for them to munch..So I made this as an evening snack and my kids just loved to have it..

Ghee Rice/Nei Choru


 
 
On the other day I made fresh homemade ghee from the butter. The whole house was filled with the aroma of clarified ghee. Next day being a sunday I preferred to make ghee rice with a non-vegetarian  kurma  and a simple curd rice. Its hot here and could not spend much time in the kitchen.
Nei Choru/Ghee rice is the one which my kids love eating.It is very easy to make and also it goes well with any hot spicy curry.It has strong flavour of ghee and it is rich in raisins and cashewnuts.The aroma of the rice is very strong in ghee and it is a bland rice which nil spicyness.

Puran Poli...Happy Tamil New year

 
 
அனைவருக்கும் எனது இனிய தமிழ் புத்தாண்டு நல்வாழ்த்துகள் .

 
Wishing u all a very happy tamil new year and a happy Vishu to all keralites..Tamil New year has always been very dearer to me as they celebrate it grandly at my parents home.My mother cooks several delicious dishes on this day and it was a real treat to us to taste all delicious food..
 
But the scenario is the other way round at our inlaws house.As they are native of Tirunelveli the way they celebrate is entirely different.It starts with a vishukanni of looking at mirror and other things like gold and rice..
 
I don't strictly follow any of these as I think ...to start anything new ..I believe everyday is a new day..But still I feel these special days are for bringing in the oneness in the family.I love to engage everyone from our family in this celebration and its a way of exchanging and sharing our love and oneness to the dear ones of the family.This is one way of compelled spending of quality time with family..
 
Made a Puran Poli some days back and thought it would an apt one to get posted for the tamil new year..

Aam Ka Paana (Spicy Raw mango Juice)



To wave away the rising mercury the tastebuds demand some kind of cool fresh drink...My kids and HH loves to have fresh juices than a meal!!They always wanted a variety in it..
In the series of summer beverages here comes Aam Ka Paana
Aam Ka Panna is typically a north Indian drink.It is a spicy n sweet Indian drink made with raw mangoes,pepper powder and sugar.It has a combination of sweetness,sourness and spicyness.
Green mangoes are rich in vitamins and minerals.Its property is such that it cools our body from intense heat.Mint is added to increase the cooling effect.Added to it sugar,salt acts as electrolytes...So this is a perfect Indian quencher for this hot hot summer.
 
I had been waiting for the fresh mangoes to arrive...One of my aunt visited us and she bought us some farm fresh raw mangoes.Immediately with no delay I made aam ka panna and delighted her with this special drink..
 
U can preserve the pulp in a fridge and can use it when u want to make this juice

Happy Ugadi...Tender Coconut Pudding



Happy Ugadi,Happy Gudi Padawa,Happy Cheti Chand,

Wishing everyone a very Happy and Prosperous new year..Though today is  new year for most of them in India,I only know more about Ugadi-The telugu new year.As my hometown (Vellore)is very much near to Andhra Pradesh border the people at vellore celebrate Ugadi too..
 
I remember my dad relating Dosa to Ugadi...We refer the festival to be called Dosa Pandikai(Dosa festival-The day on which we make dosa ).In early days, dosa and Idly were made very rarely and that too only on few occasions....like Ugadi .The reason might be the huge crowd in a family,no time,expensive etc..
 
My grandfather used to narrate stories regarding the ugadi.It is always nice to have old people at home from whom we  unknowingly learn many things.He used to say that they taste dosa only on ugadi and not very often in the year..But the scenario today is very different.Dosa batter serves me a lot when I am in jiffy..Almost 3-4 days a week I make dosa either for the breakfast or for dinner..
 
Well coming to the dish..Tender coconut pudding is the one that I always wanted to try..I was very scared whether it would turn good but to my happiness it was extraordinary tasty and was too cool for this hot summer..
 
Why should u always make Obbattu,Ugadi pachadi for the new year...Celebrate this ugadi with this mild dessert and quench the hotness..

Orange Punch-orange n carrot drink


Summer is very severe and feel like drinking only fresh juices.Children demand colourful juices.Instead of giving them the same plain orange juice I made a mixture of orange and carrot juice with little punch of ginger in it.To make it more healthier I avoided sugar and added honey to it.The taste was awesome and also soothing for this hot summer.

Pista Kulfi




Summer had started and we can feel the scorching heat..After the inconsistent power cuts I avoided getting ice-creams from shops.But u cannot deny your kids request for the ice-creams...

Kulfi/Qulfi ..the name itself brings a pleasant chill mood ..If I hadn't started this cooking blog I would have ended at purchasing the kulfi from the shops.I am so happy that I keep trying many new recipes for my blog and some had resulted exceptionally good...

One sunny morning we felt like tasting a nice ice-creams..so immediately browsed few recipes for the kulfi..most of it called for condensed milk..But I omitted it and tried with the regular milk and the taste was so yummy that I couldn't resist eating only one!!

Paneer Do Pyaza-Restaurant style



As the name indicates the dish calls for twice the amount of onion..Do means two and Pyaza means onion in hindi..My kids love paneer in any form.The dish can be either gravy or a dry one..it merely depends on ur wish and taste..I love to have it semi gravy.

Andhra Pesarattu/Greengram Dosa



Pesarattu..don't get confused with the name....Pesara(Pesara pappu) means moong dhal and attu means crepe/dosa in telugu.This dish is a signatory breakfast dish of Andhra region..Though the name sounds very confusing(for non-telugu speaking crowd) it is very easy to prepare and delicious to have too.
 
This dish is highly rich in proteins and it is a perfect breakfast for the day..Don't hesitate to make it as it doesn't call for any rice(every dosa dish is made of rice)The final dosa will not have any taste of moong dhal..The dosa is more crispy and tasty...
 
I was surprised when I heard MLA Pesarattu...Yes..Rava Upma-Pesarattu combination is referred as MLA Pesarattu..Like masala dosa..it is upma pesarattu!!!
