Carrot Rice





I am back after a long time to the blogger..I had been lazy all these days to post a dish..May be the sweets and oil items would have made me very lazy.So  decided for the next one or two weeks I should skip on to the diet food and say no to sugar!!!
 
This rice is one of the easiest one to make and it looks very richer and also colourful.It is also more easier to pack for the  kids.
 
There are may variations which with one can prepare this rice.I had done in a way which my kids prefer..If cooked rice is ready this can be done in 5-10 minutes

INGREDIENTS:
 
1 Cup of Cooked Rice
1/2 Cup of grated carrot
1 big onions chopped finely
1/2 tsp of black pepper powder
1/4 tsp of Garam Masala powder
1/4 tsp of Jeera(Cumin) Powder
1 Tbsp of small pieces of  fried cashewnuts/groundnuts
 
For tempering:
 
1 Tbsp of Oil (For kids replace it with ghee)
1 Tsp Cumin Seeds(Jeera)
1 no. of green chilly slited
1 strand of Curry leaves
1 Tsp of Garlic finely chopped(Optional)/Ginger garlic paste(Optional)
 
 
PROCEDURE:
 
 
 
1.Take a wide pan and heat the oil/Ghee.
2.Add the items mentioned in "To temper" list
3.Add the cashews(if not fried separately)then onion and saute well.
4.Add ginger garlic paste(optional) and saute it..(I had skipped this step)
5.Finally add the grated carrot and saute well.See to it that the colour is retained.Don't saute it for more time..the freshness of carrot will go off if it is done so.
 
 
 
6.Then add all the powders and saute well till the raw smell goes off.I prefer pepper powder over the red chilli powder.So had not used the chilli powder here.
 
7.Then add the cooked rice ,salt and mix well.
 
8.Serve it with any fried items like vadagam,appalam,gobi 65.
